Skinny Tonic has unveiled a series of new exotic flavours so cocktail lovers can now enjoy a G&T spiced with the tastes of the Mediterranean or cucumber, or perhaps a vodka with clear coffee tonic, reminiscent of an espresso martini.

Developed by blending science and mixology with taste specialist Synergy Flavours, the natural tonic brand says two more exciting flavours are in the pipeline.

Director Tom Gilbey, someone steeped in the gin tradition through his historic family ties to the famous Gilbey brand told Proactive the coffee tonic was the ‘most extraordinary drink he has ever tasted’.

The expanded range is now being trialled with mixer specialists and barmen to create drinks and cocktails based around the new flavours.

Vicky Berry, from Synergy, said they analysed the leading gins in the market to identify key flavour compounds and used their state of the art pairing technology and expert taste profilers to come up with the perfect matches.

“We have layered all the flavours to create a complex taste –rather than just one single flavour, so each drink is an exquisite combination of natural extracts and essences.

Gilbey, who joined the business in January, a vintner by trade, is confident that these new tonic flavours will fit in well in all the best bars, alongside both classic drinks and more creative cocktails.  “There’s a continuing trend for exploring new flavours of gin and Skinny Tonic’s exciting range will capitalise on this” he added.

Privately-owned Skinny Tonic was founded in 2014 by former Domino’s Pizza franchisee Ian Minton who as a Type-1 diabetic wanted a sugar free tonic to put in his gin.

“Its uniqueness lies in what it doesn’t contain,’ says Gilbey “it has zero sugar, zero calories and nothing artificial, with the sweetness coming from natural plant extract, stevia.”

“The new flavours really do push the boundaries of taste, and are all the more refreshing because of the natural ingredients.”

Some of the combinations being considered are remarkable, Gilbey says, with an encouraging response from tastings so far.

“We’re excited to launch these new flavours – they are very pure, and yet change completely when you put them with gin, vodka or any other form of alcohol.”

Unlisted Skinny Tonic raised £1.565mln in a three times oversubscribed placing through Seedrs in January.

It was one of the most successful fundraises yet on the crowdfunding platform.
