Milk Replacement in Baking Applications

There are two main reasons to replace milk in baked products: it is a top allergen and is an expensive ingredient. There are several groups of people that avoid  milk in processed foods. They are:

  • Lactose intolerant
  • Allergic to cow’s milk
  • Vegans and Vegetarians
  • Opposed to the use of genetically modified hormones such as rBGH that are fed to cows to increase dairy production
