I can’t say I was looking forward to a recent taste test for this paper, or at least not to the chilli sauces they had lined up for me. I’m not great with heat and expected my palate to take a painful battering. But one sauce was a revelation, a fermented sriracha that was at once smoky, fruity and savoury, with sufficient punch to get the taste buds going, but not so strong that you didn’t want to keep going back for more….
